Parev chocolate chips are a Passover ingredient better than the chametz version.

Oftentimes on the final day of Passover I’m writing a list of the foods I can’t wait to eat once Passover ends, but there’s one Passover treat that I crave year-round— Oppenheimer semi-sweet chocolate chips. They’re only sold in the weeks leading up to Passover, but they taste so much better than ordinary chocolate chips, so I load up on enough to last me several months.

Sure, they taste incredible all by themselves, but the real treat is when I make gooey chocolate chip matzo-meal pancakes for dinner.

What you’ll need:

  • ½ cup matzo meal
  • ¾ tsp salt
  • 1 tbsp sugar
  • ¾ cup cold water
  • 3 eggs
  • 1 cup chocolate chips
  1. Combine dry ingredients.
  2. Separate eggs. Beat yolks slightly and combine with water.
  3. Add to dry ingredients. Allow to stand for 20 minutes.
  4. Beat egg whites until stiff.
  5. Gently fold into matzo meal mixture.
  6. Drop by tablespoon onto hot, well-greased frying pan and brown on both sides.
  7. Sprinkle with sugar spiced with cinnamon

I also add them to my trail mix (I’m Ashkenazi, so no peanuts for me)

What you’ll need:

  • 2 cups salted almonds
  • 1 cup dried cranberries
  • 1 cup golden raisins
  • 1 cup chocolate chips

And the recipe for chocolate chip bars that’s listed on the packaging of the chocolate chips is another winner.

What you’ll need:

  • 3 eggs
  • 1 cup sugar
  • ½ cup oil
  • 3 tbs water
  • 2 cups matzo meal
  • 2 tbs grated orange peel
  • ¼ tsp salt
  • ½ cup chopped nuts
  • 1 package chocolate chips
  • Butter (for greasing pan)
  1. Beat eggs and sugar until thick and lemon colored.
  2. Beat in oil and water.
  3. Stir in orange peels, salt, and matzo meal. Add nuts and chocolate chips.
  4. Grease a 9x13 inch baking pan with butter.
  5. Bake at 375 for 20-30 minutes. Cool and cut into bars.
